PAN SEARED SEA SCALLOPS

Prep and cook time: 45 minutes 

Serves: 2

Ingredients

2 red bell peppers (diced)

1/4 cup apple cider vinegar

1/4 cup water

1/2 cup sugar

Sprigs of thyme

8-10 scallops

Red Pepper Jelly Directions

1. Combine all ingredients except for scallops and cook at a simmer until peppers are soft.  

2. Season to taste with salt and pepper.

Scallop Directions 

1. Add vegetable oil into a sauté pan until hot, then sear the scallops on both sides for a few minutes per side.

2. Season to taste with salt and pepper.

4. Place scallops on a plate, top with red pepper jelly.

5. Finish with arugula salad, thin sliced radishes and the dressing of your choice.
